Block 2 Cabernet Sauvignon

Hay Shed Hill Block 2 Cabernet Sauvignon draws from dry grown vines planted in 1975. Sited on a steep, north facing aspect, Block 2 sees the full face of the sun – ideal for ripening Cabernet.

The fruit is destemmed into open topped vessels for fermentation on skins, receiving traditional pump overs. Post ferment, the wine is left on skins for a further 10 days to ensure the tannins are fully developed.

Maturation occurs in French oak barrels for 18 months, adding complexity and structure without dominating the fruit. The wine matures further in bottle prior to release.

Inky red, Hay Shed Hill Block 2 Cabernet Sauvignon has intense flavours of sweet, fleshy fruits. Ripe, smooth tannins drive its long finish. Cellaring potential is 10 years.
